What I baked today

Chocolate Chip Bread Bites
These were very easy to make with my Sourdough starter.  I love being able to make things that are healthy for my family.  I tweeked the original recipe just a little by substituting chocolate chips for the raisins.  It turned out fine.  The original recipe is titled Cinnamon Raisin Bread Bites, and because I put chocolate chips in instead of raisins I named them Chocolate Chip Bread Bites.
This recipe came from GNOWFGLINS website.  Check it out. It is an e-Course that anyone can sign up to take and you pay only what you can afford.  It is such a great way to learn how to cook and bake a new/old healthy way.

Chocolate Chip Cinnamon Bread Bites

Ingredients
2 1/4 Cups Whole Wheat flour
1/2 Cup Sour Dough Starter (fed at least 12 hours earlier
1 Cup raw milk (or whatever type you use)
3/4 teaspoon sea salt
1/2 teaspoon baking soda
1 teaspoon baking powder
1/2 cup Organic Sucanat
3 Tablespoons ground cinnamon
2 Cups semi sweet chocolate chips

Combine the flour, starter, and milk in a medium size mixing bowl. It should be a pretty wet mass, resembling a wet biscuit dough. Cover the bowl and let the dough sour at room temperature for about 8 hours or overnight, but not more than 12 hours.

After the souring time, preheat the oven to 400 degrees Fahrenheit.

Get the soured flour mixture out, add the salt, baking soda, baking powder, cinnamon, and sugar.
Mix it up best you can with a wooden spoon. It isn't real easy, but you can do it if you keep mixing. Sometimes I use my hands to mix it. Add the chocolate chips and mix in till most are incorporated. They won't all make it into the batter but that's ok because you can just push them down into the batter when on the baking sheet.

When all is mixed in, shape the mixture into a flat rectangle. I do this on a floured cutting board. Then roll out to 1/2" thickness, adding flour to the cutting surface and rolling pin as needed. **see note below

Using a pizza cutter, cut the dough into 2" square pieces, or whatever sizes you like. Transfer to baking sheets, leaving space in between each square for them to puff up and to get nicely browned.

Put in the oven and bake for 10 to 15 minutes until nicely browned and puffy. Remove from oven and transfer to cooling rack. Enjoy!

**NOTE: I have also just transferred the mixture to a 9x13 baking dish that has been buttered and spread it out to the sides before baking. Bake as usual, then cut into squares and remove to cooling rack.
